Survey of 1,170 Participants

The quantitative survey included 1,170 participants across three Chinese provinces, with 1,025 successful 24-hour urine samples.

The study also used qualitative interviews among participants with different urinary-sodium levels.

High Acceptability but Persistent Barriers

Acceptability and adherence to the salt substitute were high.

However, inadequate knowledge, misconceptions about salt reduction and habitual intake of high-sodium pickled foods were identified as major barriers.

Implementation Lesson

Changing household cooking or table salt addresses only one component of total sodium exposure.

Other high-sodium foods and behaviors can persist and limit the expected reduction.
