Delice Natural Spring Salt is one of Türkiye’s important spring salts. It is produced from naturally saline groundwater in Delice district of Kırıkkale and is protected by a geographical indication as a designation of origin.
Geographical Location of Delice
Delice lies east of Kırıkkale on the Central Anatolian Plateau. Its landscape is characterised by broad steppe areas, undulating plateau surfaces, agricultural land and river valleys connected to the Kızılırmak system.
The continental climate can produce hot, dry summers and cold winters. These conditions can create favourable periods for traditional evaporation of naturally saline water.
How Does Spring Salt Form?
Water infiltrating underground can pass through salt-bearing geological layers and dissolve sodium chloride and other soluble minerals. The resulting saline water may then rise to the surface along geological fractures and permeable units.
Delice salt therefore differs from a product extracted as blocks from a rock-salt mine. Crystals are obtained after naturally saline water reaches the surface and the water is removed by evaporation.

Delice Natural Spring Salt was registered by the Turkish Patent and Trademark Office as a designation of origin on 9 February 2022 under registration number 1024. The application date was 15 November 2018.
Designation-of-origin status means that the product’s characteristics and production have a strong connection with a defined geographical area. The registered geographical boundary is Delice district in Kırıkkale Province.
Traditional Production Culture
The basic aim of traditional spring-salt production is to remove water from the saline solution so that dissolved salt can crystallise. Sunshine, temperature, wind and the surface area of evaporation ponds are among the principal factors controlling evaporation rate.
Spring-salt production therefore depends not only on the geological source but also on climate and local production knowledge.
Salt and Delice’s Local Identity
When a local product receives a geographical indication, the connection between the natural resource and local identity becomes officially visible.
