Tunceli Pülümür Underground Spring Salt is a traditional spring salt produced in the villages of Göneli, Hiver and Balpayam in Pülümür district from naturally saline groundwater. The product received geographical-indication registration as a designation of origin in 2025.

Geographical Area

According to the TÜRKPATENT registration document, the geographical boundary covers Göneli, Hiver and Balpayam villages in Pülümür district. The production area lies within the Euphrates Basin in a mountainous landscape surrounded by the Munzur Mountains and their extensions, the Avcı and Bağırpaşa mountains.

The registration document states that the production area is located at approximately 900 metres elevation.

Anatolian Diagonal and Plant Geography

The official registration document places the Pülümür production area within the Irano-Turanian phytogeographical region and on the Anatolian Diagonal. This geographical position contributes to a distinctive environment in terms of vegetation, climate and high-mountain ecosystems.

How Does Underground Spring Salt Form?

In Pülümür, shallow groundwater comes into contact with salt-bearing layers in the rock sequence. After dissolving the salt, the water reaches spring systems in stream valleys and emerges naturally at the surface as saline water.

This system differs from mining solid blocks of rock salt directly. Here, water acts as the natural solvent and carrier that brings subsurface salt to the surface.

Role of Climate in Production

The TÜRKPATENT registration emphasises the importance of Pülümür’s continental climate, hot summer period and strong northwesterly winds for production. Solar radiation and air movement accelerate evaporation of the saline water and support crystallisation.

Physical Characteristics

The geographical-indication document describes Pülümür Underground Spring Salt as odourless, transparent in colour and cubic in structure. The cubic crystal form is consistent with the characteristic crystal habit of the mineral halite.

Geographical Indication: Registration No. 1793

Tunceli Pülümür Underground Spring Salt was registered by the Turkish Patent and Trademark Office as a designation of origin on 21 November 2025 under registration number 1793. The application date was 13 November 2024.

Traditional Knowledge and Sociology

Spring-salt production in mountainous areas requires seasonal work patterns and local knowledge based on environmental observation. Monitoring spring discharge, determining when to fill ponds, judging crystallisation time and selecting harvest timing according to weather conditions can all depend on producers’ field experience.

Such traditional production systems not only transform a natural resource into an economic product but also help maintain regional knowledge and collective memory.
