A 2024 South African study examined not only the biological rationale for potassium-enriched salt but also taste and visual acceptability, which affect whether people will actually use it.
More information on this topic is available in the Scientific Salt Research section.
Four Formulations
Fifty-six adults compared four blends with regular salt: 35% KCl/65% NaCl, 50/50, 66/34 and 100% KCl.
Testing included double-blind taste assessment and visual identification.
50% KCl Result
Forty-five percent ranked the taste of the 50% KCl/50% NaCl blend as fantastic or really good.
Sixty-two percent liked it, would be happy to use it, or felt it tasted like common salt.
Visual Differentiation
Participants more easily identified pure NaCl and pure KCl, while intermediate blends were harder to distinguish.
The findings show that acceptable formulation is a sensory-design issue as well as a chemical one.
